Cooked: up to 9 months

How to store it

  • Keep mushrooms in a paper bag in the fridge so moisture can escape.
  • Avoid sealed plastic, which makes them slimy.
  • Don't wash until just before cooking; wipe with a damp cloth instead.

Signs it has gone bad

  • Slimy, sticky caps
  • Dark spots and wrinkling
  • Sour smell
  • Mold

Pro tips

  • Sauté and freeze mushrooms rather than freezing them raw.
  • A paper bag is the classic, effective mushroom hack.
